Buttermilk Scones — Tartine Has Done It Again

I love a good scone. More than a muffin these days. Even a really good muffin, like this one, which I made last weekend. Such a good recipe. If you haven’t tried that one yet, add it to your to-make list.

Back to the scones. You might recall my obsession with Tartine? Its quiche, bread pudding and croque monsieur in particular. Oh its croque monsieur! Why is there no recipe for it in either of my Tartine cookbooks? Hmm, perhaps it’s best that I don’t know how to make that one anyway.

OK really, back to the scones. Buttery. Flaky. Crispy on top. Not too sweet. Lemony. Blueberry-y. Delicious. When you live hundreds of miles from Tartine, this recipe’s a good one to know.

And if you like this recipe, you’ll likely like this one and this one, too. I heart Tartine. So very much.

Blueberry Buttermilk Scones
Adapted from Tartine
Yield=12

Notes:

  • Tartine’s recipe calls for Zante currants, which should be plumped in warm water for 10 minutes, then drained.
  • I usually make a half recipe — 12 scones is a lot, and the dough gets unwieldy. If you can handle it, however, by all means go for it. I have frozen the raw scone dough, too, and baked the scones after thawing the dough overnight in the fridge. Worked beautifully.

4 3/4 cup all-purpose flour
1 T. baking powder
3/4 tsp. baking soda
1/2 cup sugar
1 1/4 tsp salt
1 tsp. lemon zest, grated
1 cup + 1 T. unsalted butter, very cold
1 1/2 cups buttermilk
2 cups blueberries

Topping
3 T. butter
sugar for sprinkling such as demerara or turbinado (regular granulated is fine, too)

1. Preheat the oven to 400ºF. Line a baking sheet with parchment paper.

2. Whisk together flour, baking powder and baking soda. Add sugar, salt and lemon zest and stir to combine. Cut the butter into 1/2-inch cubes and scatter the cubes over the dry ingredients. Use a pastry blender or the back of a fork to cut the butter into the dry ingredients. When you are finished, the butter should be dispersed throughout the flour in pea-sized lumps (or bigger… mine always are).

3. Add the buttermilk all at once along with the blueberries and mix gently with a wooden spoon until the dough holds together. If the mixture seems dry, add a little bit more buttermilk.

4. Dust your work surface with flour and turn the dough out onto it. If you’ve made the whole recipe, divide the dough into two even portions. Using your hands, pat each portion into a circular disk about 1 1/2 inches thick. (Or, if you’ve made the whole recipe and want to follow Tartine’s instructions, pat the dough into a rectangle about 18 inches long, 5 inches wide, and 1 1/2 inches thick). Brush the top with melted butter. Sprinkle with sugar. Cut each disk into 6 wedges (or 12 if you’ve made the rectangle).

5. Transfer the triangles to baking sheet. Bake until the tops of the scones are lightly browned, about 25 to 35 minutes. Remove from the oven and serve immediately.

My baby bro is really funny. Last month when he came to visit, I fixed him some breakfast, a bowl of oatmeal with cinnamon and sliced banana, my favorite way to start the morning. I took a risk making him oatmeal — I knew that. I mean, it’s hard to compete with my mother who whips up plates of fried egg sandwiches on toasted homemade bread, slides them under her favorite child’s nose just minutes after he lounges into the kitchen mid-morning, not uttering a word but like some sort of magical magnet drawing cups of freshly brewed coffee and hot breakfast his way.

Oatmeal was a risk for sure. Even so, I expected a bit of a better reception. He took two bites, dipped his spoon in for a third, pushed it around a little bit, then scrunched up his face while nudging the bowl my direction and asked, “Will you eat it for me?” My baby bro is 25. I love him so much.

Well, like my mother, I feel this need to feed people — to make them happy with food — and when things don’t work out as planned, I feel disappointed. I felt a little depressed about the oatmeal. Next time he comes, I’m going to make him these muffins, my latest fix. I discovered this recipe in the November Bon Appetit’s RSVP section. They are delicious. After I made a batch of the batter, I baked off one a day in a paper-lined ramekin for about a week straight. What a treat!

I also made a teensy discovery. I didn’t have enough rolled oats for the recipe, so I substituted in steel cut oats for about half of the total. To my surprise, the steel cut oats added a nice crunch and reminded me of a favorite muffin I hadn’t thought about in years. Metropolitan Bakery in Philadelphia makes the most incredible millet muffins, and when I lived there, it was hard to pass by its doors without stopping in for one. I think I know which cookbook I need to add to my wishlist. A millet muffin sounds so good right now. Santa, I hope you’re reading.

Oatmeal Muffins

Inspired by this recipe in Bon Appetit
Original recipe hails from Tazzaria

Nonstick vegetable oil spray (or paper muffin liners, I like these)
2 1/3 cups oats (I used half steel cut oats and half rolled oats)
1 cup whole wheat or white flour
1/2 cup (packed) dark brown sugar
1/2 cup sugar
2 tablespoons natural oat bran
2 tablespoons wheat germ
2 teaspoons ground cinnamon
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
1 cup buttermilk
1/2 cup canola oil
1 large egg
1 teaspoon vanilla extract
1/3 cup boiling water

Note: I made a batch of the muffin batter and baked off a muffin a day in a paper-lined ramekin. The batter tasted as good on day 8 as it did on day 1. It’s nice to know you can do this with muffin batter.

1. Preheat oven to 375°F. Spray 8 large muffin cups (1-cup capacity) or 18 standard muffin cups (1/3-cup capacity) with nonstick spray, or line them with paper muffin liners. (Note: I baked off these muffins in paper-lined ramekins. It worked beautifully.) Whisk oats and next 9 ingredients in large bowl. Add buttermilk, oil, egg, and vanilla; whisk to blend. Stir in 1/3 cup boiling water and let stand 5 minutes. Divide batter among prepared muffin cups.

2. Bake muffins until tester inserted into center comes out clean, about 28 minutes for large muffins and 20 minutes for standard muffins. Cool 10 minutes. Turn muffins out onto rack; cool. Serve warm or at room temperature.

Fresh Corn Polenta — Where Have You Been All My Life?

Fresh corn polenta — oh fresh corn polenta! How could I have forgotten about you? I discovered you this time last year. I was out to eat. You were in my bowl. It was love at first bite. You were the very best polenta I had ever tasted, your sweet corn flavor discernible even through the jus of the pair of braised short ribs smothering you. How could this be, I wondered? I chalked it up to lots of butter and cheese and the sort of restaurant trickery that just can’t be duplicated at home. And so I forgot about you. For a whole year. Oh fresh corn polenta! I’m so happy you’re back in my life. In my home no less. And for good this time.

This is the sort of recipe I want to tell everyone about. I want to call all of my friends and family. I want to spark up conversation with people in checkout lines, knock on my neighbors’ doors, stop strangers in the street. It is so good and much to my surprise calls for no sort of restaurant magic — just a box grater, a little butter, and a sauté pan. It’s the kind of thing I could eat every night for dinner, and this week I basically have. I love it with sautéed greens or with a poached egg or just on its own with some cracked pepper and parmesan cheese. Before the season ends, I hope to try it with some sautéed mushrooms, too, which is how they serve it at La Toque, the source of this wonderful recipe.

You’ll discover it takes no time to whip up, just a little elbow grease during preparations — grating the ears of corn can be tiring. With that in mind, this is not a dish to make for company. It is the perfect dinner-for-1 or-2. It is simple and delicious. It is restaurant worthy certainly, but comfort food at its core. And I hope it will leave you wondering, as it has left me, where have you been all my life?

I found this recipe from The View from the Bay online. There’s a little video included on the website, which is sort of helpful to watch, but not critical. The original recipe hails from La Toque, where they serve it with sautéed chanterelles. Yum Yum Yum.

Fresh Corn Polenta

Serves 1

2 ears corn
2 teaspoons butter
kosher salt
grated Parmigiano Reggiano

1. Clean the corn, removing all husks and threads. Working over a large bowl, grate the kernels off of the cob on the coarse side of a box grater. You will have a very wet coarse pulpy mixture.

2. Melt the butter in a small saucepan over medium heat. Add the grated corn and season with a good pinch of salt. Simmer over low heat, stirring to prevent browning, for about 3 minutes. The mixture is ready when it just begins to thicken and set.

3. Top with some grated Parmigiano Reggiano and/or a poached egg or some sautéed greens.

I’m a real sucker for any sort of breakfast carb, especially when I’m out to eat. Challah French toast. Lemon-ricotta pancakes. Blueberry-cornmeal hotcakes. You name it. If it’s floured, fried and dripping in syrup, it has my name all over it.

Like the mussels, these are dishes I rarely make at home. Laboring over a fickle griddle is one deterrent for me. Timing is another. It’s nearly impossible to get enough pancakes and French toast and waffles out at the same time to serve everyone at once.

And you know what? I’m sort of tired of reading this line in recipes: “Place finished pancakes on a plate in a 200ºF oven to keep warm while you finish cooking.” We all know that after 20 minutes in a 200ºF oven, warm soggy disks are what remain. These foods are best eaten hot off the griddle. It’s a quandary for sure.

The solution? Well, I don’t have one for pancakes. But I do for French toast: Bake it. And start it the night before. This is the easiest French toast you will ever make, and I believe it’s one of the best, too. It’s crisp on the exterior and moist but by no means soggy on the interior. It emerges from the oven piping hot yielding enough, at the very least, for four eaters.

This recipe hails from the November 2000 issue of Gourmet — oh Gourmet how I miss you — and is a nice one to have in your file. Father’s Day is right around the corner … this might be a nice treat for everyone involved.

Overnight French Toast, Out of the Oven

Overnight Baked French Toast

Serves 4 to 6

1 (13- to 14-inch-long) loaf of soft-crust bakery-style Italian bread*
1/2 stick (1/4 cup) unsalted butter, softened
2 large eggs
1 2/3 cups whole milk
1 tsp. vanilla
3 tablespoons sugar
*Notes: My mom uses “Toasting White” (Pepperidge Farm, I believe). My aunt uses a dense bakery-style loaf of Italian bread, which is what I’ve used here — density is key. I like both breads with this preparation, however.

Accompaniments: maple syrup, berries and powdered sugar if desired

1. Cut about six to eight — enough to fit your pan — one-inch-thick diagonal slices of bread.

2. Generously butter one side of each slice and arrange slices, buttered sides up, in one layer in a buttered 13- by 9- by 2-inch glass baking dish, squeezing them slightly to fit if necessary.

3. Whisk together eggs, milk, vanilla and 1/4 teaspoon salt until combined well, then pour evenly over bread. Chill, covered, until bread has absorbed all of custard, at least one hour and up to one day, depending on bread.

4. Preheat oven to 425°F. Bring mixture to room temperature and sprinkle bread with sugar.

5. Bake, uncovered, in middle of oven until bread is puffed and top is golden, 20 to 25 minutes, or longer — make sure it’s nice and golden on top or it will be soggy in the middle. Serve immediately with fruit and syrup and powdered sugar if desired.

Quiche, Perfected + Homemade Crème Fraîche & A Little Trip to Tartine, Bouchon & Napa

Tartine Quiche

The weekend would begin with quiche. That was a given. My friend would pick me up at the San Francisco airport and before beginning our journey north, we would stop for breakfast. For quiche, that is. I have been dreaming about the Tartine quiche for over a year now, since my last and only other visit to this most adored San Francisco cafe.

The much anticipated weekend arrived, and I found myself at Tartine with two dear friends standing in a line stretching around the corner. As we waited, we contemplated our order, which quickly became apparent would be a feast. None of us was prepared to make a difficult decision this morning, so we decided to keep things simple — we would order everything. Or nearly everything: Quiche. Croque monsieur. Morning Bun. Scone. Croissant. Almond Croissant. Bread Pudding.

The quiche with ham and Swiss chard, my friends confirmed, lived up to every expectation I had created for them. The bread pudding with fresh peaches, too, and the croque monsieur with heirloom tomatoes and Gruyère similarly blew us away. It’s rare for a restaurant to offer an across-the-board spread of so many delectables, but it seems that’s just how Tartine rolls. 

So, what separates Tartine’s quiche from others? Well, I have a few ideas, thanks to the Tartine cookbook, which so generously has provided a dead-on recipe. Seriously. I followed the recipe to a T and recreated, what I believe, is the most delicious quiche on the planet. 

1. The custard ingredients/ratio. I suspect this is the primary reason why Tartine’s quiche is so fabulous. Tartine uses a ratio of 1 cup crème fraîche to 1 cup whole milk to 5 eggs. The mixing method is also interesting — one egg is whisked with 3 T. of flour until smooth. Then the remaining eggs are whisked in. Then the egg mixture is strained over the crème fraîche-milk mixture. Sound fussy? Well, it sort of is. But it’s so worth it. I wouldn’t recommend straying from the recipe or taking any shortcuts in any way.

When I made this at home, I, for the first time ever, made my own crème fraîche, which was so much fun — it’s crazy  to see heavy cream transform into a thick, tangy mass of goodness. Making crème fraîche is easy: Mix 2 tablespoons of buttermilk (or 2 tablespoons of yogurt) with 2 cups of heavy cream. Cover the bowl with plastic wrap and let sit at room temperature for 12 to 24 hours. Stir and then store until ready to use. It’s magic! 

2. The flaky tart shell is delectable. There is nothing unusual about the Tartine recipe — flour, salt, ice water and lots of cold butter. Blindbaking the shell for about 30 minutes ensures a crisp, perfectly browned crust.

3. Tartine uses uncooked greens. For whatever reason, I have been in the habit of quickly sauteéing any type of green before adding it to a quiche, but Tartine recommends otherwise. The recipe calls for 1 cup of uncooked roughly chopped greens. This is the only step where I strayed a tad — I added more like 2-3 cups of roughly chopped Swiss chard.

Well, that about concludes my Tartine quiche analysis. I feel silly getting spiritual about something as basic as a quiche, but the Tartine quiche has completely changed my perception of this classic dish. The texture of the Tartine quiche, which has not an ounce of cheese, is truly a beautiful beautiful thing. Quiche, for me, prior to tasting Tartine’s, was all about the fillers — onions, bacon, cheese, zucchini, tomatoes, mushrooms, whatever. Now, it’s about the custard, the light, creamy, custard. 

I must admit that making this quiche is no simple task. That said, if you have the tart dough made in advance (which I do now since the tart dough recipe yields enough for two 10-inch quiches) and if you have the crème fraîche made in advance (or are using store bought), making this quiche isn’t such a process. It’s also just a matter of getting familiar with the process.

Quiche with Crème Fraîche and Swiss Chard

Serves 6 to 8

Flaky Tart Dough
Yield = 2 10-inch tart or pie shells

1 tsp. salt (I used table salt)
2/3 cup ice water
3 cups + 2 T. all-purpose flour (1 lb.)
1 cup + 5 T. unsalted butter, very cold

1. In a small bowl, add the salt to the water and stir to dissolve. Keep cold until ready to use.

2. Place the flour in a large mixing bowl. Cut the butter into 1-inch (or smaller) pieces and scatter the pieces over the flour. Using a pastry blender or two knives or two forks, cut the butter into the flour until the mixture forms large clumps and the butter is in pieces the size of small peas. Drizzle the water-salt mixture over the flour and stir and toss with a fork until the dough comes together in a shaggy mass. Gently mix until the dough comes together into a ball but is not completely smooth.

3. On a lightly floured work surface, divide the dough into 2 equal balls and shape each ball into a disk 1-inch thick. Wrap well in plastic wrap and chill for at least 2 hours or up to overnight.

4. Preheat the oven to 375ºF.

5. Place dough on a lightly floured surface and roll out to 1/8-inch thick, rolling from the center toward the edge in all directions. (Lift and rotate the dough a quarter turn every few strokes to prevent sticking, and work quickly to prevent the dough from becoming warm.) Transfer the round to the pie dish, easing it into the corners. Trim excess dough.

6. Cut a piece of parchment paper large enough to fit over the pie plate generously. Fill parchment paper with pie weights or dried beans. Bake for about 25 minutes or until the surface looks light brown. Remove from oven and remove the weights and paper. Return the shell to the oven and bake until golden brown, about 5 minutes longer. Cool shell on wire rack until ready to fill.

Quiche with Swiss Chard and Crème Fraîche

1 fully baked 10-inch Flaky Tart Shell Dough (recipe above)
5 large eggs
3 T. all-purpose flour
1 cup crème fraîche*
1 cup whole milk
1 tsp. kosher salt
½ tsp. freshly ground black pepper
1 T. fresh thyme, finely chopped (I didn’t have thyme so I used chives)
1 cup uncooked coarsely chopped Swiss Chard (I used more like 2 or 3 cups)

1. Preheat the oven to 375ºF.

2. Place 1 egg and the flour in a large bowl and whisk until smooth. Whisk in the remaining 4 eggs until blended.

3. In a medium bowl, whisk the crème fraîche until smooth. Whisk in the milk. Pour the egg mixture through a fine mesh sieve held over the milk mixture. Whisk in the salt, pepper and thyme (or other herb). Stir in the chard.

4. Pour the egg mixture into the pastry shell. Place in the oven and bake for 10 minutes. Reduce the oven temperature to 325ºF and bake until the filling is just set, about 30 minutes longer. The center of the quiche should still feel slightly firm, rather than liquidy, when touched. Let cool on a wire rack for at least 20 minutes to allow the custard to set up, so that it will slice neatly. It can be served warm or at room temperature. To serve a fully cooled quiche warm, cover it with aluminum foil and reheat it in a 325ºF for about 15 minutes.

* To make crème fraîche, place 2 cups heavy cream in bowl. Add 2 tablespoons of yogurt or 2 tablespoons of buttermilk. Stir to combine. Cover bowl with plastic wrap and let sit at room temperature for 12 to 24 hours. Stir. Mixture will be nice and thick. Store in the fridge until ready to use.

The Best Bloody Mary, Breakfast at Ramos House

I’m not even the Bloody Mary type. And had my friend not encouraged me so, I wouldn’t have thought to order one. But I do as I’m told, generally, and I began my breakfast at The Ramos House Cafe with a Bloody Mary. A Bloody Mary teeming with pickled green beans, sprinkled with shredded basil and chives, and topped — completed — with a scotch quail egg that is.

What, might you ask, is a scotch quail egg? A scotch quail egg is a soft-boiled quail egg, wrapped in ham, breaded and deep fried. And it is insanely delicious. Had I ordered nothing else that morning, I would have been completely content.

Well, in theory, I would have been completely content. Had I never tasted the apple cinnamon beignets, had I never spread the buttermilk biscuits with homemade apple jam, and had I never run my fork through the wild mushroom scramble into crispy sweet potato shavings, I would have been completely content.

I’ve been to Ramos House now several times and can’t say enough about it. For one, it’s hands down one of the most charming restaurants I’ve ever stepped foot in. I could spend hours in the bathroom alone. Truly. Go. You’ll understand.

But even if Ramos House wasn’t rooted in an idyllic garden, flanked by lemon trees and gurgling fountains, stationed next to a railway leading to, perhaps, Hogwarts School of Witchcraft and Wizardry, the food would make up for any lack of ambience.

This place is worth a trip across the country. Seriously. All of you East Coasters who have yet to come visit me in sunny California, here’s some more fodder. It has been a little over a year now since I moved, and I am finally feeling settled. Meaning, I have finally found some food outlets that rival, in their own way, Ding Ho noodles, Fisher’s soft pretzles, and Melograno’s mushroom pappardelle.

My most recent visitors, pictured here standing outside Pannikin on PCH, another favorite spot, shared my enthusiasm for Ramos House. And, before leaving the OC last week, they managed to so kindly buy me a copy of the Ramos House Cafe cookbook. Words cannot describe my excitement. While I haven’t tested the recipe below, I have a feeling it’s a winner.

Bloody Mary Recipe

Yield = 4-6 servings

1 liter Clamato
Vodka or Soju
1 T. prepared horseradish
2 T. wild hot sauce (not sure what “wild” means)
1 T. black pepper
1 T. Worcestershire sauce
1 T. lemon juice
zest of 1 lemon, blanched (not sure why it must be blanched)
1 clove garlic
¼ cup pitted green olives, chopped
salt to taste

1. Place all ingredients except for the vodka in a blender or food processor and puree. Fill a glass with ice and add desired amount of vodka. Fill remainder of glass with Bloody Mary mix.

2. Garnish with Pickled Green Beans (recipe below), crab claw, herb salad and diced bell peppers.

Pickled Green Beans

2 lbs. green beans
5½ cups rice wine vinegar, unseasoned
½ small onion, sliced
¼ cup crushed, dried red chiles
1/8 cup coriander seeds
5 cloves garlic, thinly sliced
¾ cup water
4 T. salt
1 oz. whole black peppercorns
6 T. sugar

1. Bring all ingredients except for the green beans to a boil. Skim. Allow mixture to steep for at least 30 minutes, then strain.

2. Bring to a boil, blanch beans in brine (add to water for about 15 seconds, then remove), then cool on sheet trays in the refrigerator.

3. Strain pickling brine again. Cool. Return vegetables to cool in pickling liquid. Refrigerate for up to one month.

Scotch Quail Eggs

10 quail eggs
½ pound bulk sausage, raw
2 eggs, beaten
flour for dredging
bread crumbs for dredging

1. Place quail eggs in a pot, cover with water and bring to a boil for 1 minute. Drain off hot water and cover with ice to stop the cooking process.

2. When cool, peel the shells off the eggs. Flatten sausage into 10 pieces. The pieces should be big enough to encase the egg, but not too thick.

3. Roll the eggs in flour then wrap the eggs with the flattened sausage. Bread the wrapped eggs by rolling them in flour, dipping them in raw beaten eggs and rolling in the bread crumbs.

4. Deep fry in 350ºF oil for approximately 4 minutes.

Serve with:

Murdock’s Magic Mustard

1 cup Coleman’s dry mustard
1 cup sugar
1 cup tarragon vinegar
3 large eggs

1. Whisk together all ingredients in a stainless steel mixing bowl. Set bowl on top of a pot of simmering water. Stirring constantly, cook mustard sauce until it thickens. Strain through a fine mesh sieve and chill immediately. Murdock’s magic mustard will keep in the refrigerator for up to one month.

Lemon-Blueberry Muffins

Yippie … blueberries are back. Last Sunday morning while purchasing my eggs from Don at the San Clemente farmers’ market, I spotted a flat of blueberries and blackberries. I couldn’t resist purchasing a few cartons of blueberries, mostly because this recipe has been on my mind for months. Both my mother and aunt have been raving about these muffins for about a year now.

Hmmm, some notes from these authorities: 1. Make the muffins in a jumbo muffin pan. 2. Really make sure your butter is at room temperature. I did follow their advice and couldn’t be happier with the result.

So, I think I can safely file this lemon-blueberry muffin recipe in my search-no-further-for-that-ultimate-recipe folder. At the moment, the only other recipe occupying that folder that comes to mind is this one. There must be others though. No? I can’t think right now. I’ll have to report back.

Lemon-Blueberry Muffins
Source: The New York Times
Yield = 6

½ cup unsalted butter, room temperature
2 tsp. lemon zest (I used 2 Meyer lemons)
1 cup + 1 T. sugar
1 egg, room temperature
1 tsp. vanilla
2 cups cake flour (Note: I used all-purpose flour)
2 tsp. baking powder
1½ tsp. kosher salt
2 cups fresh blueberries (frozen probably work just as well)
½ cup milk

1. Preheat the oven to 375ºF. Cream butter with lemon zest and 1 cup of the sugar until light and fluffy.

2. Add the egg and vanilla and beat until combined. Meanwhile, toss the blueberries with ¼ cup of flour and sift ( … right) the remaining flour, baking powder and salt. I whisk. Wish I weren’t so lazy.

3. Add the flour mixture to the batter a little at a time, alternating with the milk. Fold in the blueberries.

4. Grease a jumbo muffin tin with butter or coat with non-stick spray. Distribute batter among muffin holes — in my tin, each cup was filled above the rim with batter. Sprinkle batter with remaining tablespoon of sugar. Bake for 30 minutes. Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. Let muffins cool in pan for 7 (yes, exactly 7) minutes before serving.

Zuni Cafe’s Fried Eggs In Bread Crumbs

Just a little jingle I thought you all might like. I found it in the book I’m reading: My Fine Feathered Friend by William Grimes.

Anyway, I’ve found my latest favorite way to eat eggs: fried in bread crumbs. This recipe comes from The Zuni Cafe Cookbook, which devotes a whole chapter (a very small chapter) to egg recipes. At Zuni, these eggs appear on the Sunday lunch menu accompanied by house-made sausage or bacon (sounds amazing), but Zuni’s chef-owner Judy Rodgers likes these crunchy eggs for dinner with a salad of  bitter greens. I couldn’t agree more: A simple salad of arugula, oranges, Parmigiano Reggiano, maybe an avocado and a couple pieces of toast couldn’t make a better dinner. 

These eggs are so yummy. Just after the eggs finish cooking, they get sprinkled with a little vinegar — don’t omit this step — which adds the perfect amount of bite. Even I refrain from dousing these eggs with Tabasco. It would ruin them.

I’ve made these eggs two nights in a row now and very likely will bring the streak to three tomorrow. When you plan on making them, be sure to read the whole recipe through — there’s nothing tricky about it, but it’s not your standard-issue recipe either.

Just some last thoughts, too: If you can find some farmers’ market greens and eggs, this meal will be all the more delicious. I feel like a brat saying this given that I live in sunny southern California, but if you do a little research, regardless of where you are, you’d be surprised what you might find. I remember buying delicious greens, even in the colder months, from various sources at the Fair Food Farmstand in Philadelphia.

For you locals, pictured below are Don’s eggs, Blue Heron Farm’s arugula, and Eli’s Ranch oranges, all of which can be found at the Sunday San Clemente farmers’ market.

The pan. The Zuni cookbook recommends using a 6- to 8- inch French steel omelet pan. I’ve used my 9.5-inch carbon steel crepe pan that I bought at Fante’s in Philadelphia. A nonstick pan will work just as well.

To clean your skillet, dump some kosher salt into it and place it over medium heat. Let the salt heat up and begin to change color. Turn off the heat.

Next, take a paper towel and rub in a circular motion, scraping off all the bits of food from the bottom of the pan. Wipe out all of the contents and discard. Drizzle pan with a tiny bit of olive oil and rub the surface to coat.

Fried Eggs in Bread Crumbs
From The Zuni Café Cookbook
Serves 1

Notes from the cookbook: This recipe has been written for one because these eggs are easy to make and fun to eat when you are alone. If you are making them for more than one person, use a larger pan and cook the eggs in batches of four to six. Also, see the note at the bottom of the recipe regarding toasting the bread crumbs in an oven.

1 loaf of white, bakery-style bread such as a peasant loaf or ciabatta or a boule
(This is to make the fresh, soft bread crumbs. You only need 3 tablespoons of crumbs, so you’ll likely need just a portion of this loaf.)
kosher salt
about 2 tablespoons extra-virgin olive oil
a few fresh thyme or marjoram leaves (optional)
2 eggs
1 teaspoon red wine, white balsamic, balsamic or sherry vinegar

1. To make the bread crumbs: Carve the crusts off a loaf of white bakery-style bread such as a peasant loaf or ciabatta or boule. (Discard the crusts or add to your compost pile.) Break the tender insides of the loaf into large chunks, then grind in the food processor. Don’t grind too finely or evenly.

2. Sprinkle the crumbs with a pinch of salt, then drizzle with enough of the oil to oversaturate them.

3. Place the crumbs in a 6- to 8-inch French steel omelet pan or nonstick skillet and set over medium heat. (If you like your fried eggs over easy, reserve some of the oiled raw crumbs to spinkle on top of the eggs just before you flip them.) Let the crumbs warm through, then swirl the pan as they begin drying out — which will make a quiet staticky sound. Stir once or twice.

4. The moment you see the crumbs begin to color, quickly add the remaining oil (or a dab of butter) and the herbs if using, then crack the eggs directly onto the crumbs. Cook the eggs as you like. (So far, I’ve made them two ways: without flipping them, but by finishing them in a heated oven so the tops cooked through a tiny bit; and flipping them, but cooking the eggs only briefly on the second side — the yolks were still runny.)

5. Slide eggs onto a warm plate ( … right), then add the vinegar to the hot pan. Swirl the pan once, then pour the drops of sizzling vinegar over the eggs.

Note: If you are preparing the eggs for more than a few people, it is a little easier to toast the seasoned bread crumbs in advance in a 425ºF oven instead of in the skillet. In that case, toast them to the color of weak tea. Then scatter them in the skillet, add the remaining olive oil and proceed as described above.

Serve these eggs with a simple salad tossed in a citrus vinaigrette (recipe below):

How to make a simple vinaigrette

I learned to make salad dressing from Chez Panisse Vegetables. This simple recipe calls for macerating shallots in lemon juice and vinegar for about 20 minutes. Once you master this simple recipe, you can alter it as you wish — use orange juice, lime juice, or any number of vinegars in place of the lemon juice and champagne vinegar. I often add sugar to taste as well.

Champagne-Shallot Vinaigrette

2 small shallots, peeled and diced
2 tablespoons champagne vinegar or white balsamic vinegar*
2 tablespoons lemon juice*
¼ teaspoon sugar (optional — this is not in the original recipe, but I always like a pinch of sugar)
½ teapoon kosher salt
1/3 cup extra-virgin olive oil
freshly ground pepper

*As I noted above, you can substitute what you wish for the vinegar or citrus. You also could use only vinegar or only citrus juice. Use whatever you have on hand or whatever you like best.

To make the dressing, place the shallots in a bowl with the vinegar, lemon juice, sugar and salt. Stir and let the mixture sit for 20 to 30 minutes. Slowly drizzle in the olive oil, whisking constantly to make an emulsified dressing. Set aside.

The Best Granola

It has come to my attention that my blog can take quite a bit of time to load on various computers. I’m not really sure why this is happening, but I find it very frustrating and I am in the process of doing something about it. Anyway, I just wanted to let you all know that part of the reason I have been such a terrible blogger these past few weeks is because I’m trying to figure out what to do.  I’ll keep you posted, and I apologize for the recent lack of activity on alexandra’s kitchen.

But before I leave you, I just thought I’d remind you all about one of my all-time favorite recipes. It has been over a year since I made this granola and it is just as delectable as I remember. The base recipe has been adapted from the Barefoot Contessa and the candied nut recipe comes from one of the Moosewood cookbooks. With the addition of dried cranberries and blueberries, this granola makes the best breakfast/snack/lunch/dinner ever. Seriously. It most definitely will appear on Olalie’s Menu.

Also, for those of you who live in the San Diego-Orange County area and have yet to make plans for Valentine’s Day, Cafe Mimosa is offering a four-course prix fixe tasting menu on both Friday and Saturday nights (Feb. 13th and 14th). The menu sounds fantastic!
